Lamb Meatballs With Spaghetti Squash and Greens
This is a great alternative to the classic spaghetti and meat balls, but with a slightly less carbohydrate content. Perfect for getting jacked and trimming down that spare tire.
First grab some lean ground lamb, for this meal prep I used two pounds of raw locally raised lamb.
I added some fresh thyme, pepper, an egg, and mixed it well.
Next I cut the squash in half and and placed it face down on a baking dish that I sprayed with coconut oil, then tossed it in the oven @400’ for 35min or so until it was soft to touch, just to burn your fingers, use an oven mitt or a dish cloth.
While the squash is cooking, roll yourself up some meatballs, and get a pan to brown them. I turn the heat up to med high and seared each side before putting them in a dish with some fresh rosemary all around them and tossed them into the oven for another 15-20min depending on how large and in charge you make them meatballs…
You can see as the meatballs, were cooking in the oven I started a sauce, just a can of generic tomato sauce, and then i loaded it up with kale and spinach, and to save time I bought the pre-chopped and wash kale and just a bag of baby spinach. Simple!
Thats it, you can scrape out the squash with a fork and then toss some sauce down and an appropriate portion of meatballs on the top, garnish with some parmesan or feta cheese, and some fresh sprouts or micro greens.
